Xpress Redi Set Go Recipes

Hi everyone. I’ve had my Xpress Redi Set Go Grill for a while now and use it quite a bit. I thought it would be fun to start a regular feature where I share a few of my favorite recipes and, hopefully, you guys can share a few of yours. I thought I’d start with a recipe that I make at least once a week: The Breakfast Burrito! So, without further ado, here it is:

1 – 8″round tortilla
1 or 2 tsps Salsa
1 tbsp shredded cheddar cheese
1 tbsp black beans
2 eggs
a splash of milk
add salt and pepper

Preheat your Xpress Redi Set Go Grill. Beat eggs, milk, and salt and pepper. Use a bit of butter to grease one well and pour in the egg mixture and the beans. Cook 2 min., flip, cook another 2 min. Soften tortilla by microwaving for 15 sec. Spread salsa all over the tortilla, cover with cheese and top with egg and beans when they’re done cooking. Tuck in sides and roll into a burrito. Place into one well. Cook 2 more min. just to lightly crisp the tortilla. Enjoy!

Btw, this is really amazing when topped with fresh guacamole.
